We have A TON of leftover ham. Just wondering what we could do with it. We’re allready thinking split pea soup, but what are some other inexpensive healthy recipes that are kind of different! Any answers are appreciated!!

Well there is ham and eggs, ham sandwiches, ham in a salad, ham and red beans, grilled ham and cheese, chopped pieces of ham for low carb snacks, ham and pasta casserole, ham salad rolls, eggs Benedict, ham and lettuce wraps. I’m sure there are lots more. Enjoy and good luck.

I love to get one of those 5 bean dried hambone soup packages (where they sell the dried beans in the grocery) add celery, carrot and other root veggies to make soup. In my grocery the bag of beans is about a buck. You can also make ham salad, ham and cheese grilled sandwiches.

me too:) tonight I’m just making a ham omelet, and serving the leftover scalloped potatoes, a big green salad (with all the extra lettuces I have) and a fruit salad (with all the extra fresh fruit I have) … tomorrow I’ll make a bean soup … and then I’ll swipe one of the other recipes you get in answers:)

Pork Fried Rice from scratch…Cook up about 3 cups of white rice and let cool in fridge for about 4 hrs or overnight. Make a sauce of 3 Tbsp fish sauce, 1 tbsp Soy sauce and 1 Tbsp Brown sugar- set aside. Scramble 2 eggs and cook without stirring for 20 seconds, then scramble with a wooden spoon until just cooked and empty into a bowl. Next add your cut up leftover ham and saute until heated thru and set aside in your egg bowl.Next saute some cut shallot and garlic in a little oil until fragrant and empty into the egg bowl and set aside. Next add your rice and the prepared sauce you made into saute pan, breaking up clumps of rice until its pretty uniformly cooked through, add some peas and cut up carrots, sliced green onion and the contents in your egg bowl (eggs, meat and aromatics) and saute until cooked through. Super yummy…..

Supper in a Dish
1 ½ cups cooked rice
1 ½ cups cooked, cubed ham
1 ½ cups shredded cheddar cheese
1 8 oz. can green peas
Combine all ingredients. Place in 3 qt. baking dish. Cover and bake at 350, 15-20 minutes or until bubbly.
Ham and Potato Casserole
1 (24oz.) package frozen hash browns with onions and peppers
3 cups cooked, cubed ham
1 (10oz.) can cream of chicken soup
1 (10oz.) can cream of celery soup
1 (8oz.) package shredded cheddar cheese
In large bowl, combine hash browns ham, soups, 1/3 cup water, salt and pepper. Spoon into greased 9×13 dish. Bake covered at 350 for 40 minutes. Uncover, sprinkle cheese over casserole and bake another 5 minutes.
Also, we love grilled sandwiches, so a grilled ham and swiss would be good. Also pasta salad with ham added would make a nice lunch or light supper. Here’s one that might work:
Pasta Salad
1 pkg bow tie pasta, cooked, cooled
1 can sliced black olives
1/2-3/4 cup cubed sharp cheddar
1 whole cucumber, chopped
bottled Italian dressing
bottled ranch dressing
salt and pepper to taste.
Combine first 4 ingredients. Sprinkle with Italian dressing until wet. Add some ranch until creamy. Salt and pepper to taste.

Refrigerator crescent rolls- chopped ham & shredded cheese, roll up and bake. Yummy!
Hot ham & cheese sandwiches
Ham salad-chopped ham, mayo, mustard-mix all together in food processor. Eat on crackers or bread.
Ham & Cheddar biscuits–Packaged biscuit mix, add shredded cheddar & minced ham to mix and bake as directed.

15 bean soup is a favorite at my house- just follow the directions on the "hambeens" bag.
We also love macaroni and cheese with ham- maybe not the healthiest, but easy and a great way to clean out the fridge, if you serve with a big salad, not so bad-
1 small box elbow macaroni, cooked
1 tbs butter
1 tbs flour
2 cups milk ( use skim for lower fat)
2 cups grated or cubed cheese ( i use a variety of whatever is left- cheddar, gouda, jarlsburg)
1 cup chopped green pepper
splash of tabasco
1 tsp mustard ( I like the spicy brown kind)
2 cups chopped ham
1 cup breadcrumbs.
butter
in a saucepan, melt butter and incorporate the flour into in over medium heat. let brown just a bit to get out the raw taste. Add milk, 1/4 cup at a time, whisking to incorporate and make a white sauce. Add green pepper, ham, and 1 cup of the cheese and stir until thick and gooey. pour over macaroni. stir in additional cheese, top with breadcrumbs and pats of butter, and bake in a 350 oven for 35 minutes.
