Oh my gosh, I did not know there was a name for this breakfast dish.. We called it creamed eggs over toast. One of my favorite comfort food.

Try the egg casserole from Cracker Barrel There are recipes on the web.

Baked French toast/casseroles are always yummy and there are tons of recipes on line (just do a search). You can even prepare them the night before and let them sit in the fridge until ready to bake. The same goes for egg casseroles or stratas which are nice for using up odds and ends that you might have leftover.

We also make stuffed French toast–cut a loaf of French bread into 2inch slices, then cut a pocket in each. Stuff with your favorite combo of sausage, ham or bacon, and swiss, mozz, or cheddar. Dip the slices in beaten egg, and fry as you would French toast. Kids LOVE this, especially if they get to help.

How about Scotch eggs?
