I don’t want a cake that I make into a basket or a bunny or anything. Just a good cake that can maybe be made in a 13X9 pan. Something spring time maybe. Thank you!

Maybe it’s just me, but I always associate Spring and Easter with carrot cake. Cream cheese frosting, mmm… There are recipes all over the place, and I’ve never had a bad one.

Buy strawberry cake mix in a box. Mix and bake following the directions on the box. Let it cool completely. Poke holes in it with the handle of a wooden spoon. Take a package of frozen strawberries in juice and puree them in a blender until mostly smooth. If they are too sour, you can add a little sugar to taste. Cover with foil and let that sit in the fridge for a few hours.

To make the frosting mix equal parts vanilla pudding and Cool Whip. Spread over the top and serve cold.

Sorry I don’t have exact measurements. This is kind of a "guess" recipe. Enjoy!

Jelly Bean Confetti Cake
2 cups all purpose flour
3/4 cup miniature jelly beans cut in half(no licorice)
1 cup sugar
1 cup soft butter
8ozs cream cheese, softened
1 tsp vanilla extract
3 eggs
1 1/2 tsp baking powder
1/4 tsp salt
Vanilla frosting
Miniature Jellybeans (no licorice)

Preheat oven to 325. Generously grease & flour 12 cup fluted
tube pan or angel food cake pan. Lightly spoon flour into
measuring cup. Level off. In a small bowl, toss jelly beans with 2 Tbsp flour. Set aside. In large bowl, beat sugar, butter, cream cheese, and vanilla until well blended. Add eggs one at a time, beating well after each addition. Add remaining flour, baking powder and salt. Blend well. Spoon 1 cup of batter evenly over bottom of prepared pan. Stir jelly beans into remaining batter; spoon into baking pan. Bake for 50 to 55 minutes or until tested done. Cool upright in pan 10 minutes on rack, and invert onto serving plate. Cool completely, frost with white frosting and sprinkle with jellybeans.

Jello Cake
1 box yellow cake mix, prepared and baked according to directions.
1 pkg jello (lemon, strawberry, orange work well)
1 1/2 cups hot water

With a straw, poke holes randomly througout still-hot cake. Mix the water and jello together and pour into holes, then pour remaining over entire cake. When cool, frost with whipped cream and sprinkle with colored sprinkles. (This will not make cake jello-like, it just makes it really moist and good)
