I’m looking for some recipes for Easter dinner for 10 people, but I’m looking for less “traditional” recipes. I’m tired of the same ol’ Ham, Lamb, green beans, pasta salad and other such side dishes….
Any unorthodox suggestions would be great !!

EASTER ITALIAN PIE
Ingredients:
1/2 pound Italian Sausage links, thinly sliced (may substitute either hot or mild bulk sausage)
3 Eggs
1 1/2 pound Ricotta Cheese
10 slices prosciutto ham, coarsely chopped (may substitute chopped, baked or boiled ham)
1/2 pound Mozzarella cheese
1 cup freshly grated Parmesan Cheese
2 tablespoons finely chopped fresh parsley
1 teaspoon dried oregano
Freshly ground pepper
Salt

Directions:

Preheat oven to 350 degrees. Butter a 7 x 11" baking dish, a 10" quiche dish or a 10" pie plate. Brown sausage in medium -size skillet over medium heat; drain.

Beat eggs into ricotta cheese in large bowl. Add sausage, ham, mozzarella, Parmesan, parsley and oregano. Season with salt and pepper. Spread mixture in prepared baking dish. Bake at 350 degrees for 40-45 minutes or until top is lightly browned. Cut into squares or wedges.

This recipe for Italian Easter Pie serves/makes 10

you can serve this with garlic bread, red wine, and a nice spinach salad with lots of mushrooms and red onions.

ITALIAN EASTER COOKIES
INGREDIENTS
1/2 cup butter
3/4 cup white sugar
3 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1/4 cup milk
1/4 cup vegetable oil
3 3/4 cups all-purpose flour
5 teaspoons baking powder

4 cups confectioners’ sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
1 teaspoon almond extract
3 tablespoons milk
3 drops red food coloring (optional)
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together 1/2 cup butter and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in 1 teaspoon vanilla and 1 teaspoon almond extract, 1/4 cup milk and oil. Combine the flour and baking powder, stir into the wet mixture. Roll dough into 1 inch balls. On a lightly floured surface, roll the balls out into ropes about 5 inches long. Tie into loose knots and place cookies 1 inch apart onto the prepared cookie sheets.
Bake for 5 minutes on the bottom shelf and 5 minutes on the top shelf of the preheated oven, until the bottoms of the cookies are golden brown. When cookies are cool, dip them into the icing.
To make the icing, cream together the confectioners’ sugar, 1/2 cup butter, and 1 teaspoon vanilla and 1 teaspoon almond extracts. Beat in 3 tablespoons milk, one tablespoon at a time, then stir in the food coloring if desired.

I was thinking that something new for Easter dinner would be nice. Instead of the same old baked honey ham, I am going to make a New England Boil.

NEW ENGLAND BOILED DINNER

2 1/2 – 3 lb. picnic ham
3-4 garlic cloves
4-5 bay leaves
Approx. 12 peppercorns
4-5 sm. onions (halved)
Potatoes
Cabbage
Carrots
Kielbasa (ring)

Place ham in large Dutch oven. Cover with hot tap water. Add spices, simmer 1 1/2 hours. Drain some water to add remaining ingredients. Simmer another 1 hour.

Amish Ham Loaf Recipe

Ingredients:
Loaf
1 pound cured ground ham
1 pound pork or hamburger
2 eggs
2/3 cup cracker crumbs or oatmeal
1/3 cup minute tapioca
1/4 cup milk

Dressing
1/4 cup vinegar
1/2 cup water
1/2 cup brown sugar
1 tablespoon mustard

Directions:

Mix loaf ingredients and form into a loaf. Boil dressing a few minutes. pour over loaf and bake in moderate oven (325-350F) about 2 hours basting occasionally. Dressing should become thick and syrupy.
